This recipe came to me as I was remembering the cold Autumn months in Toronto, snuggled up with a warm apple crumble at my uncle’s cottage in Haliburton, Ontario, surrounded by the beautiful season leaves. It inspired me to create this version of apple crumble, Canadian maple syrup with a touch of Levantine spices to warm you up.

  • 5 apples (peeled, cored & sliced)
  • 150 ml maple syrup
  • 1 tsp cinnamon
  • ½ tsp allspice
  • 115 g butter
  • 110 g brown sugar
  • 95 g all-purpose flour
  • ½ teaspoon Himalayan salt
  • 60 g rolled oats


  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the apples in an 8×8 inch baking dish. Pour the maple syrup, cinnamon and all-spice over the apples.
  • In a bowl, cream together the butter and brown sugar.
  • Stir in the flour, salt and oats. Sprinkle the oat mixture over the apples.
  • Bake in preheated oven 35 minutes, until golden and bubbly and apples are tender.
